I made some Moo Shu Pork for dinner tonight. Shanghai East was the first place I had ever seen Moo Shu Pork. Debra Paget, an actress, was sitting across from us on one occasion. My husband stated that she is/was married a Chinese oil businessman. She will always be remembered as Sunsiree, the beautiful Indian princess who married Jimmy Stewart in "Broken Arrow". We walked to the restaurant, introduced ourselves, and talked briefly about our careers. Even in her 50's, she was a beautiful woman. This moment is what I always remember when I eat Moo Shu Pork. We love, love, love Moo Shu Pork. To make it at home, however, you will need Hoisin sauce to accompany it. This sauce is not low-carb. Since years, readers have asked me how to make this low-carb sauce. But I kept struggling to find the right recipe. Let me tell you. It's better to be late than never.
Hoisin sauces are either made with brown sugar, high fructose Corn syrup, or contain a lot of molasses. I have tried many different sauce recipes that I found online over the past nine years. The two I did not try I marked "not so good" and "not special". :{
So, I decided to create my own sauce. Hoisin sauce can be used to make/serve Peking Duck or as a condiment for famous Moo Shu Pork roll. Hoisin, which is a seasoned, slightly sweetened, salty fermented soybean/plum sauce, was in my pantry. I decided to fulfill a long-standing request from my readers and create a low-carb version. As my base, I used 10 dried prunes. To get the right taste, I then added some store-bought ingredients mentioned on the commercial labels of sauce.
Let me tell you, my final sauce turned out quite well! Although it is not exactly the same as the high-molasses sauce from the grocery store, it tastes better and more authentic once it has "aged". It was much milder than I would like, so we ate it warm. The Chinese 5-Spice powder had a strong anise flavor, but not the bean paste. These flavors develop quickly and become much more pleasant over the next 24 hours.
I think it was a good first attempt at low-carb versions of this indispensable condiment. My recipe reduces the amount of carbs in hoisin sauce by reducing its 8-carb count per tablespoon. The carbs are slightly lower when you use liquid Splenda, but not much. The sauce was quite flavorful after a couple of weeks. It is best to let it age before you use it.
The Moo Shu Pork recipe will be posted later today. Gloria Bley-Miller’s wonderful The Thousand Recipe Chinese Cookbook has been my "Bible" in Chinese cooking for many years. Her cookbook is highly recommended. Blindfolded, I can cook Moo Shu pork but you must have dried tiger lily buds or cloud ear fungus to help you prepare it.
The sauce can be used once you reach Phase 2 of Atkins. It is only used in small quantities on the "pancake", a low-carb flour tortilla, that you use to make the Moo Shu Pork. Due to the soy beans in this sauce, it is not suitable for Primal and Paleo. Sauce can be kept in a sealed container in the fridge for a long time. It is now three months old and still smells/tastes great.
INGREDIENTS:
10 large dried prunes (4 oz. ), no sugar added
1/2 c. water
1 T. rice wine vinegar
3 T. low-sodium soy sauce (dark soy sauce if available)
1/4 tsp. Chinese 5-Spice powder
1 tsp. Molasses
3 T. Splenda, or a few drops of your liquid sweetener choice
2 T. Eden soybean black beans, rinsed and mashed until smooth
DIRECTIONS Combine prunes and 1/2 cup of tap water in a small saucepan. Bring to a boil. Reduce heat and simmer for 5 minutes. Use a fork to mash the water until it is smooth. If you prefer, you can blend the mixture in a blender. Take out of the heat.
Mix the beans in a bowl until they are a smooth paste. Then add the prune mixture to the bowl. Stir in vinegar, soy sauce, and 5-Spice powder. Place in a jar with a lid and let cool in the refrigerator for at least a week. It is not known how long it will keep, but I am sure it has no preservatives. It's made of basically dried fruit, sugar and vinegar (preservatives naturally), with some soy sauce (fermented), so I expect it to last quite a while. We don't yet know. This combo will spoil first because of the soy beans. When mine doesn't smell/look right, I'll remember to report back and toss it out.

What happens when you cheat keto?
The keto diet can have unwanted side effects. If you suddenly begin eating starchy carbs, the body is unable to process them efficiently and quickly, which can lead to rapid rises in blood sugar. Because your cells must use water to get back to their homeostasis, this can lead to dehydration. Due to the absence of essential minerals like potassium and sodium, dehydration can also lead to an electrolyte imbalance.
These issues are not the only ones. It is common for people who "cheat" on keto to experience digestive discomfort like constipation and diarrhea as a result of their high-carb diet. Although these symptoms are temporary, they can be very uncomfortable and disruptive. Extreme cravings from cheat meals can lead to dangerous cycles of feeling depleted, followed by binging high-carb diets. This could cause people not to follow the keto diet.
The bottom line is that cheating on the keto diet can't cause you to lose weeks or even months of progress. But, you will still have to adhere to your net carb limits.
Can I cheat one day on keto?
It's now easier than ever before to look at options that go against the grain. With information flowing like water, it's tempting to ask if you can stretch out the boundaries of your diet and cheat for a day, all while maintaining your healthy streak.
But the truth may be different from what you think. When it comes to going keto, there is no room for compromise. It is essential to follow through with your diet in order to reap the benefits and ensure long-term sustainability of your weight loss efforts and overall health.
Cheating keto can make it difficult to reach your goals. Consuming something oily or sweet signals to your body that it doesn't need it, and can hinder the benefits of keto.
Sometimes it can be difficult to avoid a lapse. It may be more difficult than following the diet. Therefore, evaluating the impact on your lifestyle could be crucial depending on factors like age, activity level or genetics.
Even though temptation can cloud judgment when making decisions, you ultimately know the best thing for your long-term well-being.
Can you eat fruit while on keto
Are you curious about whether fruit can be eaten on a keto diet. However, be cautious.
Keep carbs low to stay in ketosis, and burn fat. You can still eat certain fruits if you follow a balanced, healthy keto diet.
Low-carb fruits and vegetables can be incorporated into a keto meal program, but should be consumed in moderation. The carbohydrate contents of different fruits vary. Bananas have more carbs than bananas. Avocados are low in carbohydrates.
